“Kappa Salad” Our first attempt at Dinner

             This is a fast, easy and healthy meal to serve your family that costs the same as two pizzas or a meal for two at a restaurant. There are also enough leftovers for a couple additional meals.

Apart from the bacon, this is relatively painless to throw together, and it is tasty with it’s salty and sweet combination. I had a salad similar to this at a restaurant once, I duplicated what I could remember and then we experimented with a few new options.

After this meal, I felt normal.. not sleepy or bloated and I didn’t binge on snacks before bed. After a restful sleep, I woke up refreshed and clear headed. LittleX’s hunger was satisfied but she indulged in half a Klondike bar and slept in this morning, but say she gives it a 7. MrX and I agree with the compliments of the ingredients and he actually went to bed earlier than normal.

I would say this was a win, except for the unedited live video. This was our first production in a new location and preparing a meal for an audience.  We are so grateful you came by and shared your company with us. We look forward to sharing more meals together :).

This salad’s main components are:

  1. Romaine Lettuce
  2. Bacon
  3. Red Onion
  4. Strawberries
  5. Raspberry Vinaigrette

Experimental options:

Passed:

  • Cayenne and Lemon Sunflower Seeds
  • Mint
  • Black Olives

Failed:

  • Celery
  • Chicken
  • Radish
  • Green Onion
